Quick - Healthy - Delicious
Island Noodles is a locally-owned, women-led business. We specialize in making delicious Hawaiian-style yakisoba noodles. They are quick, healthy, and easy to eat on the go.
With a passion for delicious cuisine, owners Mike & Beth decided to open Island Noodles of New Mexico in summer of 2021.
The two of them both grew up in the Southwest region. Today they reside with their family in the Ruidoso region of New Mexico.

Our Chef
A native New Mexican, Mike spent his formative years on golf courses all across the Land of Enchantment. Having graduated from New Mexico State University, he spent the early part of his career in the telecom industry before discovering his taste for entrepreneurship.
Today, Mike is following his dream of being a wok-man and business owner. With an eye for spice and a zest for life, he brings passion and joy to every dish at Island Noodles of NM.
